Fettucine alla Romana

Cooking time: 30 minutes

ingredients

serves 6
5 tablespoons butter
1 large onion, chopped
1 garlic clove, chopped
14 ounce canned tomatoes
1/4 cup red wine or vermouth
1/4 pound mushrooms, sliced
1 teaspoon sugar
salt
freshly ground black pepper
1 pound fettucine noodles
1 tablespoon vegetable oil
2 tablespoons grated Parmesan cheese

method

1. Melt 1/4 cup of the butter in a saucepan.

2. Fry the onion and garlic until softened. Stir in the tomatoes with their liquid, wine or vermouth, mushrooms, sugar and seasoning. Cover and cook gently for 20 minutes.

3. Meanwhile, cook the fettucine in boiling salted water with the added oil for 5 - 7 minutes or until just tender.

4. Drain well and put in a warmed serving dish. Add the remaining butter and toss to coat the noodles.

5. Pour over the tomato sauce and sprinkle with the cheese.
