1/4 cup butter
1 clove garlic, crushed
1 1/2 pound white fish fillets (cod, haddock or plaice for example), skinned and cut into bite-sized pieces
salt and pepper
1 large onion, sliced into rings
2 tablespoons chopped parsley
1 pound potatoes, par-cooked and thinly sliced
method
1. Mix half the butter with the garlic and spread on the base of a 2 pint ovenproof dish. Cover with the pieces of fish.
2. Season lightly, top with the onion and sprinkle with the parsley.
3. Place the potato slices on top, in an overlapping pattern.
4. Dot with the remaining butter and bake in a moderate oven (180°C, 350°F) for 45 minutes, or until the potato topping is crisp and golden and the fish is cooked.
