1 pound white fish fillets, cooked, skinned and flaked
2 medium-sized potatoes, cooked and mashed
1 small turnip, cooked and mashed
2 hard-boiled eggs, chopped
2/3 cup canned cream-style corn kernels
1 egg, beaten
1/4 teaspoon cayenne pepper
salt and freshly ground black pepper
2 teaspoons chopped parsley
2/3 cup dry breadcrumbs
1/2 cup Cheddar cheese, grated
2 tablespoons butter
method
1. Heat the oven to 190°C (375°F).
2. Combine the fish, potatoes, turnip, hard-boiled eggs, sweetcorn, beaten egg, cayenne, seasoning and parsley.
3. Spoon into a greased 2 pound loaf pan and smooth the top.
4. Combine the breadcrumbs and cheese and scatter over the top.
5. Dot with the butter, then bake for 45 minutes or until golden brown.
