Fish Puree

ingredients

1 quart milk
1 small onion, ground
4 tablespoons flour
4 tablespoons butter or other fat
2 cups cooked fish
Salt and pepper

method

1. Scald the ground onion in milk.

2. Make a white sauce of the milk, flour, and butter.

3. Rub the cooked fish through a sieve.

4. Combine the fish and sauce.

5. Season and serve.
