French Beans with Tomatoes and Herbs

ingredients

serves 6
2 tbsp olive oil
1 onion, peeled and chopped
1 garlic clove, peeled and crushed
1 pound tomatoes, skinned and roughly chopped
1 1/2 pound French beans, halved
salt and pepper
1 tbsp chopped parsley
1 tbsp chopped basil

method

1. Heat the olive oil in a pan, add the onion and fry for about 10 minutes until softened and beginning to colour. Stir in the garlic and tomatoes. Cook, covered, for about 5 minutes.

2. Meanwhile, add the French beans to a pan of boiling salted water, return to the boil and cook for 2 - 3 minutes only.

3. Drain the beans and add to the tomato mixture. Cover and cook gently for about 10 minutes until the beans are tender and the sauce is reduced. Stir in the herbs and season with salt and pepper to taste.
