Interesting stew recipes are always welcome, so if you have a freezer this would be a good recipe. Make double the quantity, put into two dishes, cook both and freeze one. Always be sure to mark with the date, as after three months you should use and replace with another stew.
Add potatoes to the ingredients of French beef to make a complete meal in one pot.
ingredients
serves 6
1/4 cup lard
1 carrot, peeled and sliced
2 onions, sliced
2 pound topside or round of beef, cut into dice
1/2 cup flour
1/2 pint red wine
1/2 pint beef stock
bouquet garni
1/2 teaspoon made English mustard
20 button mushrooms
method
1. Melt the dripping in a heavy pan.
2. Add carrot and onions and fry gently for a few minutes.
3. Remove, and brown the meat on all sides.
4. Remove meat and stir in the flour.
5. Add wine, stock, bouquet garni and mustard, and stir until sauce is smooth.
6. Return meat, vegetables and add button mushrooms to the pan.
7. Cover with greased paper and simmer gently for 3 hours.
8. Serve with creamed potatoes.
