1 teaspoon olive oil
2 scallions, trimmed and thinly sliced
2 small cos-type lettuce hearts, trimmed, quartered and washed
3/4 pound frozen peas
1/2 level teaspoon dried marjoram
3 teaspoons lemon juice
method
1. Heat the oil in a large, heavy-based saucepan and fry the scallions in it over a moderate heat, stirring, for about 2 minutes, or until they start to soften.
2. Put the lettuce in the pan, cover and cook for about 4 minutes, until tender, shaking the pan frequently during cooking. Stir in the peas, marjoram and lemon juice, cover and cook for a further 5 minutes before serving. A few mint leaves add a lively finish.
