This will make an appetizer or a filling side dish. With golden or maple syrup it will make a dessert.

1/2 cup fresh sweetcorn kernels, cut from the cob
1/2 cup flour
1/2 teaspoon baking powder
2 tablespoons sugar
salt
freshly ground black pepper
1 egg, beaten
2 tablespoons grated Parmesan cheese
oil for deep frying
method
1. Combine the corn, flour, baking powder, sugar, seasoning, egg and cheese.
2. Heat the oil to 185°C (360°F) or until a small cube of bread dropped in will turn golden in 60 seconds.
3. Drop spoonfuls of the corn mixture into the oil and fry for 3 - 4 minutes or until golden brown.
4. Drain on absorbent paper. Serve hot.
