Fried Oysters

ingredients

serves 6
1 pint oysters
2 eggs
1 1/2 cups milk
2 cups flour
1 teaspoon salt

method

1. Drain and dry oysters.

2. Beat eggs, add milk and beat in flour and salt until smooth.

3. Dip each oyster in batter and fry in hot deep fat (375°F.) until browned, 2 to 5 minutes.

4. Drain on absorbent paper. Serve with lemon.
