1 cooking apple
1 orange, scrubbed
1 lemon, scrubbed
20 whole cloves
3 inch fresh root ginger, peeled
1 1/2 tbsp soft brown sugar
1 1/2 cups bitter lemon or nonalcoholic wine
wedges of orange rind and whole cloves, to decorate
method
1. Preheat the oven to 200°C/400°F. Score the apple around the middle and stud the orange and lemon with the cloves. Bake them in the oven for 25 minutes until soft and cooked.
2. Quarter the orange and lemon and pulp the apple, discarding the skin and the core. Finely grate the ginger. Place the fruit and ginger together in a bowl with the soft brown sugar.
3. Add 1 1/4 cups boiling water. Using a spoon, squeeze the fruit to release more flavour. Cover the mixing bowl and leave to cool for several hours or overnight.
4. Strain into a jug of cracked ice and use a spoon to press out all the juices from the fruit. Add the bitter lemon or non-alcoholic wine to taste. Decorate with orange rind and cloves.
