2 tablespoons Butter
1/2 cup celery, finely sliced
5/8 cup ready-to-eat dried apricots, finely chopped
3 1/2 cups fresh breadcrumbs
1 tbsp chopped sage
1/4 tsp ground mixed spice
1 egg
1 tbsp Dijon mustard
salt and pepper
method
1. Melt the butter in a pan, add the celery and fry gently for 5 minutes. Turn into a bowl and add the apricots, breadcrumbs, sage and spice. Stir well and leave to cool.
2. In another bowl, beat the egg with the mustard, then add to the stuffing and mix thoroughly to bind, seasoning generously with salt and pepper. If the stuffing is too dry, moisten with a little stock.
note: This stuffing is sufficient for a 10 pound oven-ready turkey.
