3 slices of brown bread, cut into small cubes
1 1/4 cups tomato juice
2 garlic cloves, finely chopped
1/2 cucumber, peeled and finely chopped
1 green (bell) pepper, cored, seeded and finely chopped
1 red (bell) pepper, cored, seeded and finely chopped
1 large onion, finely chopped
1 1/2 pound tomatoes, blanched, skinned, seeded and chopped
1/3 cup oil
2 tablespoons red wine vinegar
1/4 teaspoon dried marjoram
1/4 teaspoon dried basil
salt freshly ground black pepper
method
1. Soak the bread cubes in the tomato juice for 5 minutes, then reserve the juice and mix the cubes with the garlic, cucumber, peppers, onion and tomatoes.
2. Puree the mixture in a blender or food mill. Add the remaining ingredients and the reserved tomato juice to the puree and mix well.
3. Chill for at least 2 hours.
