German Cheesecake

Cooking time: 40 - 50 minutes

ingredients

serves 8
6 ounce graham crackers, finely crushed
5 tablespoons butter, melted
1/2 cup sugar
1 teaspoon ground cinnamon
2 eggs, beaten
1/4 teaspoon salt
juice and grated rind of 1/2 lemon
1/2 cup thin cream
1 cup cottage cheese
3/4 cup mixed nuts, chopped

method

1. Heat the oven to 180°C (350°F).

2. Combine the cracker crumbs, butter, 2 tablespoons sugar and the cinnamon.

3. Press all but 2 tablespoons of this mixture onto the bottom and sides of a greased 8 inch spring-form pan.

4. Combine the eggs, remaining sugar, the salt and lemon rind and juice.

5. Stir in the cream, cheese and half the nuts and mix well. Pour into the crumb case and sprinkle over the rest of the nuts and the reserved crumb mixture.

6. Bake for 35 - 45 minutes or until a skewer inserted into the centre comes out clean.

7. Leave the cake to cool in the turned-off oven, with door open, for 10 minutes.

8. Serve cold.
