1. Dice the ginger finely and put it into a bowl with the ginger syrup and the rum. Grate the chocolate into the bowl and stir thoroughly
2. Add the mascarpone cheese, mix well, cover and chill for as long as you can. It will stiffen as it chills.
3. Scoop the cream mixture into four brandy-snap baskets and serve. Variation
Try brandy, sweet sherry or coffee liqueur as a substitute for the rum.
