Ginger Scones

Filled with ginger cream, Ginger scones are easy to make and impressive to serve.

ingredients

makes 7
2 cups self rising flour
large pinch of salt
1 level teaspoon powdered ginger
1/4 cup margarine
2 tablespoons white sugar
1 medium egg, beaten
milk to mix
1/4 pint heavy cream, whipped
2 or 3 lumps crystallized ginger or stem ginger

method

1. Preheat oven to hot, 230°C (450°F).

2. Lightly grease a baking sheet.

3. Sift the flour with salt and powdered ginger into a bowl. Do this twice.

4. Rub in the margarine.

5. Stir in the sugar.

6. Add the beaten egg and just enough milk to mix to a soft, light dough.

7. Roll out the dough to at least 1/2 inch thickness.

8. Using a 2 inch plain cutter, cut out seven rounds.

9. Put the rounds on the baking sheet and bake in centre of preheated oven for 10 - 15 minutes, or until golden.

10. Leave scones to cool on wire rack.

11. Split the scones in half.

12. Whip the cream slightly.

13. Chop the ginger and stir it into the cream.

14. Sandwich scones with the ginger cream and eat the same day.
