makes 6 glasses
3 lemons
1 pint boiling water
2 level tablespoons peeled and grated root ginger
2 oz sugar
Strained juice of 2 limes
6 slices lemon
6 slices lime
8 ice cubes
1 pint soda water or sparkling mineral water, chilled
method
1. Pare the rind thinly from one lemon. Put the rind into a heatproof jug, pour the boiling water on it and add the ginger and sugar. Stir well, cover and leave to infuse for 1 hour.
2. Squeeze the juice from all three lemons and strain into a serving jug. Add the lime juice, then strain in the liquid from the ginger mixture and stir.
3. Add the lemon and lime slices and the ice to the jug. Top up with the soda water or mineral water. Stir again and serve in tall glasses.
