A fairly simple and quick dish to prepare, it is best to peel the shrimps as this helps them to absorb maximum flavour. Serve as a main course with a variety of accompaniments, or with a salad as a starter.
ingredients
serves 4
1 tbsp sunflower oil
3 garlic cloves, roughly chopped
3 tomatoes, chopped
1/2 tsp salt
1 tsp crushed dried red chillies
1 tsp lemon juice
1 tbsp mango chutney
1 green chilli, chopped
15 - 20 cooked king shrimps, peeled
fresh cilantro leaves and 2 chopped scallions, to garnish
method
1. Heat the oil in a medium saucepan, and add the chopped garlic.
2. Lower the heat. Add the chopped tomatoes along with the salt, crushed chillies, lemon juice, mango chutney and chopped fresh chilli.
3. Finally add the shrimps, turn up the heat and stir-fry quickly until they are heated through.
4. Transfer to a serving dish. Serve immediately garnished with fresh cilantro leaves and chopped scallions.
