You can use ready-to-eat dried apricots. Reduce the liquid to 1 1/4 cups, and add the apricots for the last 5 minutes.

2 cups kumquats
1 1/4 cups dried apricots
2 tbsp raisins
1 2/3 cups water
1 orange
1 inch. piece fresh root ginger, peeled and grated
4 cardamom pods, crushed
4 cloves
2 tbsp honey
1 tbsp slivered almonds, toasted
method
1. wash the kumquats, and, if they are large, cut them in half. Place them in a pan with the apricots, raisins and water. Bring to the boil.
2. Pare the rind from the orange and add to the pan. Add the ginger, the cardamom pods and the cloves.
3. Reduce the heat, cover and simmer for about 30 minutes or until the fruit is tender, stirring occasionally.
4. Squeeze the orange juice and add to the pan with honey to sweeten. Sprinkle with almonds and serve.
