Gooseberry Cheese Cooler

If fresh or frozen gooseberries are not available, canned ones are often packed in heavy syrup, so substitute a different fresh fruit.

ingredients

serves 4
4 cups fresh or frozen gooseberries
1 small orange
1 tbsp clear honey
1 cup half-fat cottage cheese

method

1. Top and tail the gooseberries and place them in a pan. Finely grate the rind from the orange and squeeze out the juice, then add them both to the pan. Cover the pan and cook gently, stirring occasionally, until the fruit is tender.

2. Remove from the heat and stir in the honey. Puree the gooseberries with their juice in a blender or food processor until almost smooth. Cool.

3. Press the cottage cheese through a sieve until smooth. Stir half the cooled gooseberry puree into the cheese.

4. Spoon the cheese mixture into four serving glasses. Top each with gooseberry puree. Serve chilled.
