Grape Cheese Whip

ingredients

serves 4
1 cup black or green seedless grapes, plus 4 sprigs
2 egg whites
1 tbsp superfine sugar
finely grated rind and juice of 1/2 lemon
1 cup skimmed milk soft cheese
3 tbsp clear honey
2 tbsp brandy (optional)

method

1. Brush the sprigs of grapes lightly with egg white and sprinkle with sugar to coat. Leave to dry.

2. Mix together the lemon rind and juice, cheese, honey and brandy. Chop the remaining grapes and stir in.

3. Whisk the egg whites until stiff enough to hold soft peaks. Fold the whites into the grape mixture, then spoon into serving glasses.

4. Top with sugar-frosted grapes and serve chilled.
