The bitter-sweet flavour of Campari combines especially well with citrus fruit. Because of its alcohol content, this dish is not suitable for young children.

3 tbsp superfine sugar
4 tbsp Campari
2 tbsp lemon juice
4 grapefruit
5 oranges
4 sprigs fresh mint
method
1. Bring 2/3 cup water to the boil in a small saucepan, add the sugar and simmer until dissolved. Leave to cool, then add the Campari and lemon juice. Chill until ready to serve.
2. Cut the peel from the grapefruit and oranges with a serrated knife. Segment the fruit into a bowl by slipping a small paring knife between the flesh and the membranes. Combine the fruit with the Campari syrup and chill.
3. Spoon the salad into four dishes and garnish each dish with a sprig of fresh mint.
