1/2 cos lettuce, trimmed and washed
1/2 pound young spinach leaves, trimmed and washed
1/2 small cucumber, diced
1/3 cup cottage cheese
1/2 cup fetta cheese, rinsed with cold water and cut into small pieces
2 level tablespoons chopped fresh mint, or 1 1/2 level teaspoons dried mint
1 teaspoon virgin olive oil
1 teaspoon lemon juice
1 clove garlic, peeled and crushed
2 medium black olives, stoned and sliced
Freshly ground black pepper
method
1. Dry the lettuce and spinach leaves gently with kitchen paper and tear them into small pieces. Mix with the cucumber, cottage cheese, fetta and mint in a salad bowl.
2. Blend the oil with the lemon juice and garlic, mix in the olives and season with pepper. Pour the dressing over the salad, toss and serve.
