Green Beans with Apples and Almonds

ingredients

serves 4
3 3/4 cups water
salt
1 pound green beans, trimmed and halved
6 tablespoons butter
1 onion, thinly sliced and pushed into rings
2 tart apples, peeled, cored and chopped
1/4 cup almonds, flaked

method

1. In a large saucepan bring the water to the boil and add salt and beans; simmer until they are just tender—depending on the beans, this should take about 10 minutes. Drain the beans and set aside.

2. In a frying-pan melt the butter. Add the onion and the apples and cook, stirring occasionally, for 10 - 12 minutes until apples are tender.

3. Stir in the beans and almonds and reduce heat to low. Cook for 5 minutes, stirring occasionally.

4. Transfer to a warmed serving dish. Serve hot.
