1 pound fine green beans, tops and tails removed
1 tablespoon slightly salted butter
2 teaspoons lemon juice
Freshly ground mixed peppercorns
2 level tablespoons chopped fresh dill, or 1/2 level teaspoon dried dill
method
1. Cook the beans in unsalted boiling water for 3 - 4 minutes, until almost tender. Turn into a colander, rinse under a cold tap and drain.
2. Melt the butter in a large, nonstick skillet over a moderate heat until it sizzles. Cook the beans in it, tossing and stirring, for 2 - 3 minutes. Season with the lemon juice and pepper, mix in the dill and turn into a warmed serving dish.
