You could make this lovely dish at any time of the year using imported or frozen vegetables and still get a pretty, healthy -and unusual - salad.
ingredients
serves 4
6 ounce shelled Fava Beans
1/4 pound French or flat beans, quartered
1/4 pound mange tout
8 - 10 small fresh mint leaves
3 scallions, chopped
4 tbsp green olive oil
1 tbsp cider vinegar
1 tbsp chopped fresh mint, or 1 tsp dried
1 garlic clove, crushed
salt and black pepper
method
1. Plunge the Fava Beans into a saucepan of boiling water and bring back to the boil. Remove from the heat immediately and plunge into cold water. Drain. Repeat with the French or flat beans.
2. Mix together the blanched beans, the raw mange-tout, mint leaves and scallions.
3. Mix together the olive oil, vinegar, chopped mint, garlic and seasoning thoroughly, then pour over the salad and toss well. Chill until ready to serve.
