2 tablespoons frozen spinach puree
1/2 bunch of watercress leaves
1 tablespoon parsley
a few fresh tarragon leaves
1 1/4 cups mayonnaise
method
1. Simmer the spinach and herbs in a little water. Drain, squeeze dry and puree the mixture. Leave until cold, then fold into the mayonnaise.
