Green pea puree

COOKING TIME: 45 minutes

ingredients

serves 4
1 tablespoon olive oil
2 scallions, trimmed and sliced
1 small onion, peeled and chopped
3 tablespoons dried split green peas, rinsed
1 small potato, peeled and sliced
4 fresh mint leaves
1 cup vegetable stock
1/2 pound frozen peas
Sprigs of fresh mint to garnish

method

1. Heat the oil in a saucepan and fry all the onions in it over a moderate heat for 5 minutes Stir in the dried peas, potato, mint leaves and stock. Bring to the boil, cover and simmer, stirring occasionally, for 30 minutes.

2. Stir in the frozen peas. If the vegetables look dry, add a little water. Cook, covered, for 5 minutes, then take off the heat. Leave to cool for 5 minutes before blending in a food processor for 30 seconds to make a smooth puree. Serve the puree garnished with the sprigs of mint.
