4 chicken breast fillets, supremes or quarters, with skin
salt and pepper
3/8 cup butter, softened
3 tbsp pesto
lemon juice, to sprinkle
1. Make 3 - 4 deep cuts on each side of the chicken breasts. If using portions, make several cuts on the skin side. Season well with salt and pepper.
2. Put the butter into a bowl and gradually work in the pesto. Spread half of the pesto butter over the chicken skin and sprinkle with a little lemon juice.
3. Lay the chicken breasts on the grill rack and grill under a medium-high heat for about 10 minutes. Turn the portions over, spread with the remaining pesto butter and sprinkle with a little more lemon juice. Grill for about 10 minutes until cooked through. (Some portions may take longer.)
4. Serve the grilled chicken with any accumulated pan juices poured over.
