1 tablespoon sesame seeds
14 ounce medium, flat mushrooms or shiitake mushrooms
2 tablespoons teriyaki sauce
2 tablespoons mirin or sweet sherry
1 tablespoon sugar
1 tablespoon finely chopped chives
1 teaspoon sesame oil
10 chives, cut into short lengths
method
1. Preheat the oven to moderate 180°C (350°). Sprinkle the sesame seeds on a baking tray and bake for 10 minutes, or until golden. Remove from the tray.
2. Wipe the mushrooms with a damp cloth and discard the stalks. Put the mushrooms in a shallow dish. Combine the teriyaki sauce, mirin, sugar, chives and sesame oil, pour over the mushrooms and leave for 5 minutes.
3. Put the mushrooms on a greased baking tray, brush with half the marinade and grill under a preheated hot grill for 5 minutes.
4. Turn the mushrooms over, brush with the remaining marinade and grill for another 5 minutes or until browned. Garnish the mushrooms with the roasted sesame seeds and chopped chives.
