1 1/2 pound farmed rabbit, divided into even -sized joints
2 level tablespoons soured cream
Freshly ground black pepper
1 tablespoon lemon juice
Curly endive, lemon slices and flat-leaf parsley to garnish
method
1. Lay the rabbit joints in one layer in a dish. Season the cream well with pepper and coat the rabbit pieces evenly with it. Cover with a lid and refrigerate for at least 6 hours, and up to 24 hours if more convenient.
2. Thirty minutes before cooking, remove the rabbit from the refrigerator, uncover and leave at room temperature.
3. Arrange the rabbit joints on the grill rack and cook under a hot grill for about 7 minutes on each side, or until cooked through and golden brown.
4. Lift the rabbit joints onto a heated serving dish and sprinkle the lemon juice over them. Garnish with the endive, lemon slices and parsley, and serve immediately.
