4 skinless chicken breast fillets
1 tbsp cilantro seeds, crushed
1 tsp ground cumin
2 tsp mild curry paste
1 garlic clove, peeled and crushed
3/4 pint yogurt
salt and pepper
3 tbsp chopped cilantro
1. Prick the chicken breasts all over with a fork and flatten them slightly.
2. Mix the crushed cilantro seeds with the ground cumin, curry paste, garlic and yogurt in a large shallow dish. Season with salt and pepper, and stir in the chopped cilantro.
3. Add the chicken and turn to coat with the spiced mixture. Cover and leave to marinate in the fridge for at least 30 minutes, preferably overnight.
4. Transfer the chicken to the grill rack and grill under a high heat, turning occasionally, for about 20 minutes or until cooked through. Serve straightaway, with rice and a mixed salad.
