This fiery version of a popular Mexican dish always proves a favourite at parties. The dip can be served with any number of accompaniments, including tortilla chips, crudites or breadsticks.
ingredients

2 ripe avocados, peeled and stoned
2 tomatoes, peeled, seeded and finely chopped
6 scallions, finely chopped
1 — 2 chillies, seeded and finely chopped
2 tbsp fresh lime or lemon juice
1 tbsp chopped fresh cilantro
salt and freshly ground black pepper
cilantro sprigs, to garnish
method
1. Put the avocado halves into a large mixing bowl and mash them roughly with a large fork.
2. Add the remaining ingredients. Mix well and season according to taste. Serve garnished with fresh cilantro.
