Halibut Creole

ingredients

serves 4.
2 tablespoons butter
1 tablespoon flour
1 tablespoon minced green pepper
1 tablespoon minced onion
2 cups cooked tomatoes
Salt and pepper
2 pounds halibut steaks

method

1. Melt butter and blend in flour. Add minced green pepper and onion and cook 3 minutes.

2. Add tomatoes and cook until thickened, stirring constantly.

3. Simmer 10 minutes longer, then rub through strainer and season with salt and pepper.

4. Season halibut steaks with salt and pepper and arrange in greased baking dish.

5. Pour Creole sauce over fish. Bake in hot oven (400°F.) 30 minutes.
