2 hard-boiled eggs, roughly chopped
5 tablespoons stuffed green olives, chopped
3 ounce ham, finely chopped
1/4 cup Cheddar, grated
3 sheets ready-rolled puff pastry
1 egg yolk, lightly beaten
1. Preheat the oven to hot 220°C (425°F). Lightly grease two baking trays. Combine the eggs with the olives, ham and Cheddar in a bowl.
2. Cut the puff pastry sheets into 4 inch rounds (about five rounds from each sheet.) Spoon a tablespoon of the mixture into the centre of each round, fold over the pastry to enclose the filling and crimp the edges to seal.
3. Place the pastries on the trays 3/4 inch apart. Brush with egg yolk and bake for 15 minutes, or until brown and puffed. Swap the trays around after 10 minutes.
Cover loosely with foil if browning too much. Serve hot.
