Cooking time: 25 minutes plus cooling
ingredients

1 cup long-grain rice
2 cups water
1 teaspoon salt
3/4 cup cooked ham, diced
1/2 cucumber, diced
1/4 cup mayonnaise
salt
freshly ground black pepper
1 small lettuce
6 tomatoes, quartered
method
1. Put the rice, water and salt in a saucepan and bring to the boil. Stir once, then cover the pan and simmer very gently for 15 minutes, or until the rice is tender and has absorbed the water.
2. Spread out the rice on a large platter to get cold.
3. Add the gammon, cucumber, mayonnaise and seasoning to the cold rice and mix well.
4. Arrange the lettuce leaves on a serving platter and pile the ham and rice mixture in the centre.
5. Garnish with the tomato wedges.
