Ham Supper

ingredients

serves 4
4 thick ham steaks or gammon rashers, about 3/4 inch thick
1/4 pound demerara sugar
3 teaspoons dry mustard
1/2 pint milk
cornstarch

method

1. Preheat oven to moderately hot, 190°C (375°F) or gas 5.

2. Trim ham or gammon rashers and lay them in a casserole.

3. Sprinkle over 3/8 cup sugar mixed with mustard.

4. Pour milk over and cover with a lid or piece of foil. Cook in centre of oven for 45 minutes.

5. Place ham or gammon on a shallow, ovenware dish.

6. Thicken sauce with cornstarch and water paste.

7. Pour sauce over meat, sprinkle with remaining sugar and put under a hot broilerl.

8. Garnish with watercress and serve with a green salad.

If you like fruit with ham, try pineapple, peaches, apricots or plums. The tartness of the fruit will contrast well with the crunchy sweet coating on the ham. Drain juice from the canned fruit and put in the dish with the ham for the final broiling. For an alternative fruit flavour, serve cranberry sauce separately.
