3 tablespoons butter
1 small onion, peeled and chopped
1 garlic clove, peeled and crushed
2 cups white breadcrumbs
2 tbsp chopped flat-leafed parsley
2 tbsp chopped tarragon or thyme
finely grated zest and juice of 1 small lemon
1 medium egg yolk
salt and pepper
method
1. Melt the butter in a small pan, add the onion and garlic and fry gently for 7 - 10 minutes to soften. Tip into a bowl and leave to cool.
2. Add the breadcrumbs, chopped herbs, lemon zest and juice, then stir in the egg yolk to bind the stuffing. Season well with salt and pepper.
notes
• This stuffing is sufficient for a 3 pound oven-ready chicken.
• Keep the spent lemon halves to put into the cavity of the bird for flavour.
