makes 4 glasses
2 level tablespoons dried mint
1 level tablespoon dried sage
1 level tablespoon dried verbena
1 3/4 pints boiling water
2 teaspoons clear honey
2 teaspoons lemon juice
2 lemon slices, quartered, and fresh sage sprigs for decoration
method
1. Spoon the mint, sage and verbena into a large, warmed teapot. Pour on the boiling water and stir quickly, then cover and leave to infuse for 5 minutes.
2. Put 1/2 teaspoon of honey and 1/2 teaspoon of lemon juice into each of four tea glasses, then pour in the tea through a strainer. Drop two quarter-slices of lemon into each glass and decorate with a sprig of sage.
You can use thyme or borage instead of verbena.
