Hoki is a good choice for this dish but if it's not available, use cod, haddock or whiting instead.

1 pound hoki or other white fish fillets, skinned
4 tbsp fresh whole wheat breadcrumbs
2 tbsp snipped chives or scallion
14 ounce can chopped tomatoes
3/4 cup button mushrooms, sliced
salt and black pepper
method
1. Cut the fish fillets into large chunks and place in a food processor. Add the whole wheat breadcrumbs, chives or scallion. Season to taste with salt and pepper and process until the fish is finely chopped, but still has some texture left.
2. Divide the fish mixture into about 16 even-sized pieces, then mould them into balls with your hands.
3. Place the tomatoes and mushroon in a wide saucepan and cook over medium heat until boiling. Add the fish balls, cover and simmer for about 10 minutes, until cooked. Serve hot.
