CUCUMBER SALAD
1 cucumber, peeled
2 teaspoons salt
2/3 cup soured cream
4 scallions, finely chopped
BURGERS
1 pound minced beef
salt and pepper
oil for brushing
GARNISH
shredded lettuce
8 scallions
1 small onion, sliced into rings
1 tomato, sliced
4 gherkins
method
1. To make the cucumber salad, dice the cucumber and place it in a strainer. Sprinkle with the salt and leave for 15 to 20 minutes, then dry on absorbent kitchen paper.
2. Place the cucumber in a serving dish, top with the soured cream and garnish with the scallions.
3. Mix the minced beef with seasoning to taste and shape it into four burgers. Brush the burgers with a little oil and cook under a hot grill or over a barbecue until browned on the outside and juicy in the middle.
4. Allow 4 to 6 minutes on each side, according to taste.
5. Arrange the lettuce on four plates. Place a burger on each and add two scallions.
6. Garnish the burgers with onion rings, slices of tomato and gherkin fans.
