1/4 cup butter
1 medium onion, chopped
1 clove garlic, crushed (optional)
14 ounce can peeled tomatoes
2 tablespoons Worcestershire sauce
2 tablespoons honey
salt and pepper
4 large or 8 small chicken drumsticks
watercress sprigs to garnish
method
1. Place the butter, onion, garlic, tomatoes with their can juice, Worcestershire sauce, honey and seasoning in a small saucepan. Heat gently for 30 minutes.
2. Brush the drumsticks with the sauce and cook over a barbecue for 10 to 15 minutes on each side, depending upon size, brushing frequently with the sauce.
3. Serve any remaining sauce separately with the cooked chicken, garnish with watercress and accompany with a rice and vegetable salad.
