1/2 cup butter or margarine
2 oz soft brown sugar
4 oz thick honey
grated rind and juice of 1 lemon
2 eggs, lightly beaten
2 cups self rising flour
1 teaspoon baking powder
ICING
1 3/4 cups Confectioner’s sugar, sifted
2 — 3 tablespoons lemon juice
pared lemon rind to decorate
method
1. Melt the butter or margarine, sugar and honey together with the lemon rind and juice over a gentle heat, stirring occasionally.
2. Leave to cool slightly, then beat in the eggs.
3. Sift the flour and baking powder together and beat into the melted mixture to give a smooth, thick batter.
4. Divide between greased, deep patty tins and bake in a moderately hot oven (190°C, 375°F, gas 5) for 15 to 20 minutes. Cool on a wire rack.
5. Beat the Confectioner’s sugar and lemon juice together until smooth, then pour it over the cakes and top with lemon rind.
