Other fruits can be used in place of plums, depending on the season. Canned black cherries are also a convenient storecupboard substitute.

1 pound ripe red plums, quartered and stoned
7/8 cup skimmed milk
4 tbsp skimmed milk powder
1 tbsp light muscovado sugar
1 tsp vanilla extract
7/8 cup self-rising flour
2 egg whites
Confectioner’s sugar, to sprinkle
method
1. Preheat the oven to 220°C/425°F. Lightly oil a wide, shallow ovenproof dish and add the plums.
2. Pour the milk, milk powder, sugar, vanilla, flour and egg whites into a food processor. Process until smooth.
3. Pour the batter over the plums. Bake for 25 - 30 minutes, or until well risen and golden. Sprinkle with Confectioner’s sugar and serve immediately.
