The white sauce must be thick. Take care to measure all liquids accurately, otherwise you will have a sloppy dip that will drop everywhere. Dry cider could replace white wine.
ingredients
serves 4 - 6
1 pound pork sausages
1/2 pint thick white sauce (see Basic recipes, page 6)
1/2 pound Cheddar cheese, grated
1 teaspoon made mustard
salt and pepper
1/4 pint light cream
4 tablespoons white wine (optional)
method
1. Twist each sausage into three pieces. Grill until golden and keep hot.
2. Warm the white sauce and stir in the cheese and mustard.
3. Season well and add cream and wine, if used.
4. Spike the sausages on cocktail sticks and serve by dipping them into the sauce.
