Hummus

ingredients

5/8 cup dried chickpeas
1 tablespoon olive oil
1 small finely chopped onion
1 1/2 teaspoons ground cumin
pinch of cayenne pepper
2 tablespoons lemon juice
1/2 cup olive oil, extra
3 cloves garlic, crushed

method

1. Put the chickpeas in a large bowl, cover with plenty of cold water and soak overnight.

2. Rinse well and transfer to a pan of boiling water. Cook, covered, over medium heat for 1 hour, or until tender.

3. Drain and return to the pan. Add the tablespoon of olive oil, onion, cumin and cayenne pepper to the pan and cook over high heat for 1 minute.

4. Transfer to a food processor, add the lemon juice, extra olive oil and garlic, season with salt and process until smooth. Add water if you prefer a thinner consistency.
