Indonesian Fish Curry

ingredients

serves 4
1 1/2 pound Cod or coley fillets
Salt and pepper
2 tbsp All purpose flour
1 Onion
1 Large cooking apple
1 tbsp Lemon juice
1/4 cup butter
2 tbsp Oil
2 tbsp Curry powder
1 pint Stock
2 tbsp Seedless white raisins
2 tbsp cornstarch
1/2 cup Split almonds

method

1. Cut fish into pieces, sprinkle with salt and coat with the flour. Peel and slice onion. Peel, core and slice apple and sprinkle with the lemon juice.

2. Heat the butter and oil in a flameproof casserole. Add curry powder and onion and fry for 5 minutes. Add fish and cook for a few minutes on all sides. Add apple slices and cook for 3 minutes.

3. Pour stock into casserole and add Seedless white raisins. Blend cornstarch with a little stock or water and stir in. Bring to the boil and simmer for 10 - 15 minutes.

4. Add almonds and cook for a further 2 minutes. Taste and adjust seasoning and serve.
