Italian Ham and Pasta Shells

Canned ham could be replaced with fresh ham but it needs to be chunky. Try ham or picnic ham steaks cooked as directed on the package and then diced. Allow half a steak per person for an average serving.

ingredients

serves 4
2 tablespoons Butter
1 onion, chopped
1/4 cup flour
1 can (14 ounce) tomatoes
2 tablespoons tomato puree
1/4 pint chicken stock
salt and pepper
pinch of sugar
bouquet garni

1 tablespoon chopped parsley
1 can (11 ounce) ham, diced
6 ounce pasta shells, cooked quickly in boiling salted water

method

1. Melt the butter and fry the onion lightly.

2. Stir in the flour, add all the remaining ingredients apart from the pasta.

3. Bring to the boil, stirring all the time, and simmer for a further 5 minutes.

4. Remove the bouquet garni, adjust the seasoning and serve on the drained pasta shells.
