You can prepare the meatballs, cover and refrigerate, then cook when you are ready, or cook them in advance and reheat them lightly covered with foil, in a warm 160°C (315°F). They can also be cooked and frozen, then reheated.

8 ounce lean beef mince
1 small onion, grated
1 clove garlic, crushed
1/2 cup fresh white breadcrumbs
1 1/4 ounce pitted black olives, chopped
1 teaspoon dried oregano
1 tablespoon finely chopped fresh parsley
oil, for cooking
method
1. Combine the mince, onion, garlic, breadcrumbs, olives, oregano, parsley and salt and black pepper, to taste. Mix together thoroughly with your hands.
2. Form teaspoons of the mixture into balls. This is easier if you roll them with wet hands.
3. Heat a little oil in a skillet and cook the meatballs in batches until well browned and cooked through.
