Italian Torrone

Delicious, rich and uncooked, this recipe is quick to prepare. You may prefer to put it in a square 7 inch tin and cut the torrone into bite sized pieces to serve at coffee time. graham crackers crumble well for the filling.

ingredients

makes 12 - 16 slices
1/2 cup soft margarine
7/8 cup cocoa powder
1 1/4 cups ground almonds
1 egg
1/2 cup superfine sugar
2 tablespoons water
2 ounce semi-sweet biscuits
1/3 cup candied cherries, chopped
1/4 cup walnuts, chopped
walnut halves and 2 candied cherries to decorate

method

1. Mix margarine and cocoa powder together until soft.

2. Add ground almonds and egg, mix in well.

3. Place sugar and water in a saucepan and dissolve gently.

4. Pour on to cocoa mixture and beat well.

5. Break biscuits into almond-size pieces and add to the mixture, together with cherries and walnuts.

6. Place in a 8 inch sandwich tin lined with greaseproof paper; smooth top with a knife and leave to set in a refrigerator or cold place.

7. Ease around the edge with a knife and turn out on to a plate.

8. Decorate with walnuts and candied cherries and serve immediately, or return to refrigerator until required.
