Jam Circles

For a children's party, vary this recipe by making traffic lights. Cut out three small circles instead of one and fill with raspberry and apricot spread and lemon curd with green food colouring. The biscuits can be stored longer if not filled.

ingredients

makes 15
8 ounce All purpose flour
large pinch of salt
5/8 cup margarine
1/2 cup superfine sugar
1 medium egg, beaten
1/3 cup Confectioner’s sugar
3 heaped tablespoons rasberry spread

method

1. Preheat oven to moderately hot, 190°C (375°F).

2. Grease two baking sheets.

3. Sift flour and salt into a bowl.

4. Rub in margarine until the mixture resembles fine breadcrumbs.

5. Stir in the superfine sugar.

6. Add the beaten egg and work lightly to a firm dough.

7. Roll out thinly.

8. Using a 2 1/2 inch fluted cutter, cut out 15 rounds.

9. Remove centre of each round with a smaller cutter. Re-roll centre's and cut out 15 rounds, do not remove the centre's from these.

10. Put all the biscuits on the prepared baking sheets and bake in centre of preheated oven for 15 minutes or until golden.

11. Cool the biscuits.

12. Sift the Confectioner’s sugar and sprinkle it on the biscuit rings.

13. Sandwich biscuits in pairs with the rings on top using a little of the spread. Carefully spoon or pipe the rest of the spread into the centre of each biscuit sandwich.

14. Store in an airtight tin and eat within three days.
